Can I keep my WhatsApp number?

Yes, for an existing WhatsApp account. WhatsApp is linked to your phone number, not to your SIM or eSIM. If you already have WhatsApp set up on your number, installing a data-only eSIM changes nothing — messaging continues to work normally over the eSIM's data connection.
But if you're setting up WhatsApp for the first time (new account, new number, or re-verifying after a device change), this will not work on a data-only eSIM. WhatsApp registration requires receiving an SMS or phone call to confirm the number, and a data-only plan has no SMS/voice capability to deliver that code.
Bottom line:
Existing WhatsApp account + data-only eSIM → works fine, no issue.
New WhatsApp account/registration + data-only eSIM → won't work. You need SMS or voice access on that number first (via a physical SIM, a voice/SMS-enabled eSIM, or another device) before switching to data-only.
