It is perfectly possible to keep multiple eSIM profiles on your mobile device. However, you must select an active eSIM profile that will work in conjunction with your primary physical SIM card. In other words, Dual SIM mode allows you to have your primary physical SIM card activated and one of your saved eSIM profiles simultaneously.
Since the introduction of the iPhone 13, Apple has innovated by allowing the simultaneous use of two eSIMs, thus rendering the physical SIM card inactive. This technological advancement could well become widespread in the coming years.
