When you buy a physical SIM card, it's advisable to insert it into your phone only once you've arrived at your destination. Inserting it too soon risks activating your plan in your home country, which could shorten the validity period of your offer.
As for eSIMs, you need an internet connection to download them. While you can download them before you leave, wait until you arrive at your destination to enter the PIN or complete the activation. This ensures your credit starts being used at the appropriate time.
